Ex-SEED-ingly tasty biscuits

I have always been an advocate of making meals that are quick and simple. I very rarely make complicated dishes, so when I went to a friend’s garden for a socially-distanced tea and she served these seed biscuits, saying that she had prepared them in 5 minutes, I knew that I had to have the recipe!

This recipe makes about 14 biscuits.

Ingredients:

150g sunflower seeds

150g pumpkin seeds

½ cup small seeds (e.g. sesame, chia, hemp)

2 eggs

1/3 cup coconut sugar

Preheat the oven to 180ºc

Mix all ingredients together.

Place heaped spoonfuls of the mixture onto a lined baking tray.

Bake for 10 minutes. Do not over bake them. Take them out of the oven and let them sit on the tray for another 10 minutes before moving to a cooling rack.

How easy is that?!

Seeds contain fibre, healthy fats and an abundance of vitamins and minerals, so these biscuits are not only tasty and very more-ish, but are also good for you.

Please note that this recipe contains sugar, and therefore these biscuits should be eaten in moderation and not by anyone who is concerned about their blood sugar levels.
