A 10-minute meal? Prep is key!
This is why I keep my fridge stocked with salad veg, always have hard-boiled eggs in the fridge and love to use my leftovers.......

....... so that when we have a birthday tea party in the garden, the guests leave and I am left tired and wondering what to make for supper, I can quickly whip up a salad for my crew, who to be honest, were really not that hungry after the birthday cake!!! But still needed a little something!

This salad comprises a base of lettuce, cucumber and tomato, a few leftover roast potatoes from the previous night, an avocado, tinned tuna and hard-boiled egg.
Ticks all the nutrition boxes and was ready in 10 minutes!
